Today at work we made white chocolate cupcakes with a fresh raspberry glaze; this inspired me to glaze the last few mini cupcakes I had frozen in my fridge with a similar glaze for tomorrow's bento! I included those, some cashews and some fresh fruit with the main course--puff pastry empanadas with a mushroom-spinach filling (I included some small side dishes of marinara to accompany, not pictured). I was in a hurry so I didn't make an egg wash to seal my pastries--but they stayed together fairly well regardless :o) And now on to what I was supposed to be doing for the past few hours--finishing up a test for my students (instead I did taxes and bentos, oh well!)!
